Jonny is gone tonight until Saturday for the last weekend of Wood Badge. He missed out on a fabulous Sweet & Sour Dinner. The kids ate it all up and were starting to fight over who got the leftovers for lunch the next day. It's so nice to please everybody with the same meal. This recipe is definitely a keeper.
Sweet and Sour Sauce
2 cups water
2/3 cup distilled white vinegar
1 1/2 cups white sugar
1 (8 ounce) can tomato sauce
1 can pineapple tidbits, drained
3 tablespoons cornstarch
5 drops of red food coloring
I used a large can of pineapple and substituted the drained juice for some of the water and added diced green and red bell pepper.
In a medium saucepan over medium heat, mix together water/juice, distilled white vinegar, white sugar, tomato sauce, pineapple tidbits and cornstarch. Cook, stirring occasionally, 15 minutes, or until mixture reaches desired color and consistency.
I added yesterdays meatballs to half of the sauce and served over rice. We had frozen/baked egg rolls on the side.
I also found the scriptures that I want to put on my dining room wall. 2nd Thessalonians 3:10 "...if any would not work, neither should he eat" and "By the sweat of thy brow shalt thou eat thy bread." Genesis 3:19

I love the scripture...might have to steal that idea for our house.
